Spinach Lasagna Recipe
Ingredients: For the layers: • Lasagna sheets (fresh or dry) • 500g fresh or frozen spinach • 1 finely chopped onion • 2 garlic cloves, minced • 2 tbsp olive oil • 250g ricotta cheese (or cottage cheese as an alternative) • 1 cup shredded mozzarella cheese • ½ cup grated parmesan cheese • Salt & black pepper to taste • A pinch of nutmeg (optional) For the béchamel sauce: • 3 tbsp butter • 3 tbsp flour • 3 cups milk • Salt, pepper, and nutmeg to taste
Preparation Steps:
1. Prepare the filling: • Heat olive oil in a pan. • Sauté the onions until soft. • Add garlic, then the spinach, and cook until wilted and most of the water evaporates. • Remove from heat and let it cool slightly. • Mix the spinach with ricotta cheese, season with salt, pepper, and nutmeg. 2. Make the béchamel sauce: • Melt the butter in a pot over medium heat. • Add the flour and stir until it turns golden. • Gradually pour in the milk while whisking continuously until you get a creamy texture. • Season with salt, pepper, and nutmeg. 3. Assemble the lasagna: • In a baking dish, spread a thin layer of béchamel. • Add a layer of lasagna sheets. • Spread some of the spinach-ricotta mixture. • Sprinkle a bit of mozzarella. • Repeat the layers until ingredients are used up. • Top with béchamel and sprinkle mozzarella and parmesan on top. 4. Bake: • Preheat the oven to 180°C (350°F). • Cover the dish with foil and bake for 30 minutes. • Remove the foil and bake for another 10 minutes until the top is golden brown.
To Serve:
Let it rest for 10 minutes before cutting. Serve with a fresh green salad or garlic bread.
