For boiling the meat: 2 kilograms lamb with bones (large pieces) 1 large onion (quartered) 3 bay leaves 2 cinnamon sticks 10 cardamom pods 10 black peppercorns 1 tablespoon mixed spices or Mansaf spices 2 tablespoons salt For cooking the rice: 1/4 cup ghee 3 cups Basmati rice 2 tablespoons salt 1 teaspoon turmeric 4 1/2 cups water For cooking the yogurt mixture: 1/2 kilogram yogurt (can be a mix with cow's milk yogurt) 2 cups buttermilk 2 tablespoons cornstarch 1/4 cup water 1 teaspoon turmeric 1/2 teaspoon mixed spices or Mansaf spices For serving: Thin flatbread For garnish: Fried nuts Chopped parsley
How to prepare
**Rinse the rice with water several times and soak it for 30 minutes.** **For boiling the meat:** In a medium-sized pot, place the meat and onions. Fill the pot with water and let it boil. Skim off the foam that appears on the meat's surface using a slotted spoon. Add bay leaves, cinnamon, cardamom, pepper, salt, and mixed spices. Cover the pot and let the meat cook over medium heat for two hours. Strain the meat and keep the broth. **For cooking the yogurt mixture:** In a small dish, place the starch and water, and stir until the starch dissolves. In a wide pot, combine yogurt, buttermilk, the starch mixture, and turmeric. Use a whisk to stir the yogurt until smooth. Place the pot over medium heat and continue stirring until the yogurt boils for 10 minutes. Add 1 cup of the broth and let the yogurt boil for an additional 5 minutes until the meat absorbs the flavor of the yogurt.
