Lentil Soup

Ingredients:
1 cup of washed and drained lentils 1 medium sized onion, chopped 2 garlic cloves, chopped 2 tablespoons of olive oil 1 carrot, cut into small pieces 1 potato, cut into small pieces A teaspoon of cumin A teaspoon of dry coriander Salt and black pepper to taste 6 cups broth (vegetable or chicken broth can be used) Juice of half a lemon
How to prepare:
In a large pot, heat olive oil over medium heat. Add onions and garlic and sauté until they become translucent. Add lentils, carrots, and potatoes, and continue stirring for 2-3 minutes. Sprinkle the cumin and dry coriander and stir the ingredients. Add the broth and let the mixture boil. After boiling, reduce the heat and let the soup cook for 25-30 minutes or until the lentils and vegetables are tender. Use an electric blender to grind the soup to a fineness that suits your taste.
