Ingredients: • 4 medium potatoes (preferably a starchy variety like Russet) • Cold water with ice • 2 tbsp cornstarch • Vegetable oil for frying • Salt to taste Instructions: 1. Peel and cut the potatoes into medium-sized sticks. 2. Soak them in cold ice water for 30–60 minutes to remove excess starch. 3. Drain and dry the potatoes thoroughly, then toss them with cornstarch. 4. Fry in two stages: o First fry: at medium heat (150–160°C / 300–320°F) for 5 minutes until soft and pale. o Let them cool or freeze for 30 minutes for extra crispiness. o Second fry: at high heat (180–190°C / 355–375°F) until golden and crispy. 5.
