Musakhan is one of the most iconic traditional dishes in Palestinian cuisine. It’s a symbol of hospitality and a celebration of authentic ingredients like extra virgin olive oil, caramelized onions, tangy sumac, and roasted chicken. Served on traditional taboon or shrak bread, Musakhan is more than just a meal—it’s a cultural experience often prepared for gatherings and family occasions.

✅ Main Ingredients: • 1 whole chicken (cut into 4–6 pieces) • 4 loaves of taboon or thin flatbread (shrak or pita) • 5–6 large onions (thinly sliced) • ¾ cup extra virgin olive oil • 3 tablespoons sumac • Salt and black pepper to taste • 1 teaspoon mixed spices (optional) • Juice of half a lemon (optional, to enhance acidity) • Roasted pine nuts or almonds (for garnish)
1. Prepare the Chicken: • Clean the chicken and season it with salt, pepper, and optional spices. • Roast in the oven, or partially boil then pan-fry or roast until golden and fully cooked. 2. Caramelize the Onions with Sumac: • In a large skillet, heat half of the olive oil. • Add the sliced onions and sauté over medium heat until soft and lightly caramelized (about 15–20 minutes). • Add the sumac, salt, and lemon juice, and stir to combine. • Pour in the remaining olive oil and mix well. 3. Prepare the Bread: • Lay the bread loaves on a baking tray. • Spread each loaf generously with the onion-sumac-olive oil mixture. • Place a portion of the roasted chicken on each loaf. • Sprinkle additional sumac on top if desired. 4. Final Bake: • Place the tray in a preheated oven (180–200°C / 350–400°F) for 10–15 minutes to warm the bread and meld the flavors.
