1 egg (preferably at room temperature) 1 tablespoon white vinegar or lemon juice 1/2 teaspoon salt 1/4 teaspoon sugar 1 cup (240 ml) vegetable oil (such as sunflower or olive oil)
In the bowl of an electric mixer, combine the egg, vinegar or lemon juice, salt, and sugar. Begin mixing on medium speed until the ingredients are combined. While mixing, gradually add the oil in a thin stream, continuing to mix until the mixture is thick and creamy. If the mayonnaise becomes too thick, you can add a little water or vinegar to thin it out to your desired consistency. Taste the mayonnaise and adjust the seasoning to your taste. Put the mayonnaise in an airtight container and store in the refrigerator.
